Tomatillo Salsa:


6 Tomatillos
2 Large Jalapenos 
(seeded for mild heat, leave seeds for lots a heat)
1 Head of Garlic
1 Medium White or Yellow Onion
1 bunch of Cilantro
1/2 tablespoon of Sea Salt
1/2 tablespoon of Olive Oil 
1/2 cup of water 

Place ingredients on a rimmed baking sheet. Drizzle with Olive Oil and Sea Salt . 

Roast the Tomatillos , jalapenos , garlic and onions  at 450 degrees for about 20 mins.

Add the roasted vegetables with any liquids released from the tomatillos to vita mix (blender), add cilantro and 1/2 cup of water and blend to the consistency  you like.
